Canned meat

Canning is probably the most efficient meat preservation method. It ensures the destruction of pathogens and spoilage microorganisms and allows foods to be easily handled and transported.

Canned meats are immediately ready to serve and can be taken on outdoor trip, contrary to frozen foods that have to be thawed out first. Animals and insects cannot force their way through a can or the jar, so the safeguarding of food is easier.

The factors involved in the selection and sourcing of meat raw materials for canning have much in common with those involved in the choice of meats for other manufacturing purposes and indeed, for the supply of meat for retail sale.

The most important of these factors, along with process, are the identity of the meat (species form which it has been derived), its composition (fat content, collagen content, etc), its quality and its microbiological condition.

Perishable or pasteurization canned meats are cooked to an internal temperature of a least 150 °F, as required by federal inspection regulations. This result in canned products being frees from any public health hazard but does not result in complete destruction of all microbial contaminants.

Curing process of meat

It was the process of treating meat with rock salt that led to modern curing practices. There is evidence of meat preservation with salt as early as 3000 BC and it is clear that the Romans utilized rock salt for a variety of meat preservation treatments.

Curing is the process of preserving meat for future needs primarily with salt; a byproduct of the curing processes is the added flavor that curing imparts, especially when spices and herbs are used. Among cured meats that are available in the market, hot dogs, other sausages and frankfurter, salami, bologna, pepperoni as well as ham, bacon and corn beef.

Almost all meats have a high percentage of water which must be removed to prevent spoilage, and the application of slat to meat extracts most of this water. Salt is to act as a preservative and to impart the characteristic salty character. It also increases the water-holding capacity of protein and thus enhances water uptake.

At the same time, salt, as it invades the meat, produces an antibacterial action to prevent meat from spoiling.

Cured meats represent a large portion of the processed meat products consumed in North America.

These processed meats are attractive in their color, flavor, texture and are popular because they combine variety with convenience of relatively long shelf-life and storage stability.

Meat curing

Meat curing is an ancient process that was developed from the necessity to preserve a highly perishable food product. In its simplest form the word ‘curing’ means ‘saving’ or ‘preserving’.

It is generally believed the cured meat processes were derived from preservation treatments first developed with salt.

Although a variety of compounds can be used in cuing meats, the basic curing ingredients are salt, sugar or some other sweetener and nitrite.

Although nitrate has the same effects as nitrite, it acts slowly and is seldom used today.

Meat cured only with salt will have a better flavor but will also envelope an objectionable dark color.

Sometimes reducing agents such as vitamin C or the related salt of iso-ascorbic acid, sodium erythrobate, are used to facilitate the coloring effect of nitrite and in many instances, spices and materials such as monosodium glutamate are used as flavor enhancers.
